Jamaican Fruit Cake

Ingredients
- ½ lb. dark sugar
- ½ lb. granulated sugar
- 1 lb. butter
- 2 teaspoons vanilla
- 2 teaspoon lime juice
- 1 teaspoon lime rind
- 4 oz. skimmed milk powder
- 6 eggs
- 2 lb. mixed fruits
- 4 oz. bread crumbs
- ½ lb. baking flour
- 2 oz. baking powder
- Pinch of salt
- 8 oz. overproof white rum
- 2 cups port wine
- 2 tbsp. browning (optional)
Directions
- Preheat oven 350ºF.
- Cream sugar and butter until fluffy.
- Add eggs one at a time and mix well.
- Mix flour, bread crumbs, baking powder, salt and skimmed milk powder.
- Fold flour into butter mixture while adding rum and wine a little at a time.
- For color add browning.
- Pour mixture into greased baking tin
- Place in preheated oven.
- Bake for 1 hour.
- Reduce temperature to 250ºF for 45 minutes or until done.
