Jamaican Fruit Cake

Ingredients

  • ½ lb. dark sugar
  • ½ lb. granulated sugar
  • 1 lb. butter
  • 2 teaspoons vanilla
  • 2 teaspoon lime juice
  • 1 teaspoon lime rind
  • 4 oz. skimmed milk powder
  • 6 eggs
  • 2 lb. mixed fruits
  • 4 oz. bread crumbs
  • ½ lb. baking flour
  • 2 oz. baking powder
  • Pinch of salt
  • 8 oz. overproof white rum
  • 2 cups port wine
  • 2 tbsp. browning (optional)

Directions

  1. Preheat oven 350ºF.
  2. Cream sugar and butter until fluffy.
  3. Add eggs one at a time and mix well.
  4. Mix flour, bread crumbs, baking powder, salt and skimmed milk powder.
  5. Fold flour into butter mixture while adding rum and wine a little at a time.
  6. For color add browning.
  7. Pour mixture into greased baking tin
  8. Place in preheated oven.
  9. Bake for 1 hour.
  10. Reduce temperature to 250ºF for 45 minutes or until done.
